Cortado

Cortado is a Spanish coffee drink with a 50/50 measure. The same amount of espresso coffee and milk. This is traditionally served in a small glass. The word cortado derives from the Spanish verb cortar, which means "to cut". This means that you reduce the acidity of the coffee by diluting it with a little milk.

Start by brewing a single espresso in a glass. Froth approximately 25 ml of milk while the espresso is brewing. Pour over the milk and serve immediately.

If you want to make a traditional cortado, the milk shouldn't be frothed to a fluffy foam. The drink should be much smoother than a caffè macchiato and cappuccino. Recently it has become more common to froth the milk and more variations of the recipes have emerged.
