The taste of Biologica is full-bodied and round with an elegant aftertaste. The aromas are characterized as an elegant combination of fruitiness together with notes of walnut and chocolate.
Even though the coffee consists only of arabica beans, we have chosen to dampen a bit of the acidity that is so typical of arabica. This is our mildest espresso coffee.
The beans in Biologica are grown at 1,200 meters above sea level in the Sierra Madre de Chiapas mountain range in the absolute southernmost part of Mexico. Biologica consists of two different types of Arabica beans: Catimor and Catuaí.
Catimor has influences from Robusta due to the fact that it is a hybrid of Timor Hybrid (genetically related to Robusta) and Caturra. This means that the acid is slightly lower while the bitterness is elevated. To create an Arabic coffee that still fits into the Italian coffee culture by not being too sour, it is a good idea to use beans such as Catimor.
Catuaí is a slightly sweeter bean to the taste, which in combination with the natural acidity that all Arabica beans have in common, creates a well-rounded taste. Catuaí is a hybrid of the high-production bean Mundo Novo and compact Caturra. Thanks to this combination, Catuaí has become a big favorite with many coffee growers, about 50 percent of all beans grown in Brazil today are Catuaí.
The combination of Catimor and Catuaí leads to a well-balanced blend that takes advantage of the increased bitterness and reduced acidity from Catimor as well as the sweeter note from Catuaí.
